Outside of mac and cheese, cereal, eggs and toast, and cheddar cheese, there aren’t many meals that make my children’s mouths water.
This recipe however, though it may not make my kids swoon, makes their bellies full and my heart happy to know they have something HEALTHY in their tummies.
My best friend brought this recipe home with her from Costa Rica. It’s delicious and SO quick and easy! Makes great leftovers for lunch the next day too.
can black beans, rinsed
small red onion, diced
- 1 or 2
red peppers, diced
garlic cloves, finely chopped
- lime juice
cheese crumbled (vegans omit)
- 1 plantain, fried* So good!
While rice is cooking, sauté garlic, onion and red pepper in coconut oil (or
your cooking oil of choice).
Spoon rice into a bowl. Cover with a layer
of beans.Top with garlic, onion and pepper mixture, feta cheese, avocado
chunks, tomatoes, and a squeeze of fresh lime juice.
Top with fried plantains (not shown because I uh, burned them).
* Slice the plantain in about 2 cm thick circles and pan fry in 1 tblsp. coconut oil until they are crispy and browned.
